Gajar halwa

This popular Indian dessert, gajar halwa which I made is easy and quick. I have not added khoya in this recipe, just added sugar, milk and nuts. I have added full fat milk and cooked this halwa.

On this special occasion this easy and quick halwa has saved my time and simultaneously I was able to cook other two dishes.

Gajar halwa is what I cook occasionally as we all love it. After a meal, a small bowl of any sweet dish completes your meal.

Depending on individual taste, one can add appropriate amount of sugar. Many a times I just spread gajar halwa on chapati, roll and eat.

You can also store gajar halwa in refrigerator for 3 to 4 days in an air tight container.

Preparation time - 45 min

Serves - 4

Ingrediants -

1. Grated carrots - 3 cups
2. Sugar -  1 & 1/2 cup
3. Full fat milk - 1 & 1/2 cup
4. Ghee - 3 Tb spoon
5. Cashews - 10 pieces
6. Almonds - 10 pieces
7. Cardamom powder - 1/2 tea spoon
8. Saffron/Kesar (To garnish) - 5 strings (Optional)

Procedure -

1. Wash, peel and grate carrots.


 2. Cut each almond into 2 to 3 pieces and each cashew into half.

3. In a kadhai, add ghee and once the ghee melts add grated carrots.


4. Keep the flame on medium and stir.


5. cook for 15 minutes. Stirring occasionally.

6. Now reduce the flame to low and add sugar. Mix well.



7. Once the sugar melts completely add cashews and almonds. mix well


8. Cook for a minutes. Stirring occasionally.

9. Now add full fat milk and stir.


10. Cover with a lid for 10 minutes and let it cook on low flame.

11. Open the lid and stir. Let it cook without lid for another 10 minutes. Stirring occasionally.

12. Now turn off the flame and add cardamom powder.


13. Serve hot, warm or cold and garnish with sliced cashews and saffron strings.
