Nutty chocolate cake in a pressure cooker

Simple, delicious and flavourful nutty chocolate cake

Preparation time - 1 hour 20 min

Ingredients:

1 cup plain flour
1/3 tea sp baking powder
1/3 tea sp salt
1/2 cup cashew & almond pieces (cut them in small pieces. Cut 1 cashew or almond in 3 to 4 pieces)
3 tb sp butter
3/4 cup castor sugar
3 tb sp cocoa powder
1 egg
1/4 cup water
1/4 cup milk
3/4 tea sp venilla essence

Procedure:

1. In a bowl shift in the flour, baking powder and salt. Mix well and keep it aside.
2. In another deep bowl add the butter and castor sugar. Mix well. Please note: The butter should be at room temperature.
3. Now add egg and beat well till it turns smooth and fluffy.
4. Add water and cocoa powder. Mix it well and make sure there are no lumps. Now add venilla essence and mix.
5. Add 1/2 amount of flour and mix gently. Now add milk and mix.
6. Add the remaining flour and mix gently. Big lumps should be mixed and dissolved in the mixture don't worry about the tiny lumps they will dissolve while baking. Make sure to mix it gently else you will loose the fluffyness of the batter.
7. Mix in the cashew and almond pieces gently.
8. Now grease the 6 inch container with butter and dust it with flour. Pour the batter in this container and tap it twice or thrice to ensure the batter is settled and distributed equally.
9. Heat the cooker with cooker plate ( which comes with cooker - many a times the plate comes with holes in it) and cover it with cooker lid. Keep it on high flame for 3 minutes. Do not add water in the cooker. Also do not use the gasket and whistle. Just place the pressure cooker lid on top of the cooker without gasket and whistle. Now carefully place the container in the cooker and close the lid without gasket. Lower the flame to lowest.
10. Let it bake for 50 to 55 minutes. Slowly insert the knife in the cake from top. If your knife comes out smoothly without any batter on it, it means your cake is baked. If not then continue cooking on low flame for another 7 to 10 minutes.
11. Take out the container from the cooker and slowly tilt the container upside down on a clean plate.

12. Let it cool down for 10 to 15 min. Once your cake cools down to room temperature it's ready to cut and eat.
